
Maturation takes place later than in Vigna Piaggione and Vigna Teatro. The grapes are a bit less sweet and less rich in “polifenol” than those in the two earlier vineyards.
The grapes from Sangiovese are generally selected for the production of “Rosso di Montalcino”.
“Cabernet Sauvignon” and “Canaiolo” are vintaged together for the production of “Dopoteatro”.
